Hi! I’m Erin, I'm 23, I've been a vegetarian for 8 years, and I’m all about: mindful eating, doing, and living. Sustainable practices. Insatiable learning. Being better, through and through… or at least trying. I graduated last winter with a degree in Environmental Writing, finished the year working on an organic farm, and moved to Colorado as a favor. Now I’m trying to get buff so I can climb some huge rocks.
Fridays, Sundays, and Tuesdays are my designated bike to work days! It’s about 12 miles one way and takes me anywhere from 40-50 minutes. Tomorrow, I’m gonna crush it.
